The Great American Bistro is all about bringing that friendly, neighborhood feel to the busy lives of the people around us. We are a no-fuss eatery that aims to make our customers feel right at home and provide them with a simply delicious meal. Chef Carlos Brown is more than a celebrity chef. He is a culinary artist who cooks with his heart and soul.

Chef Carlos—as he is affectionately known as to his fans—believes that he is on a mission to deliver sumptuous feasts with a touch of the Southern hospitality that he was raised up on. His humble beginnings learning to cook from his mother and grandmother as a child in Charleston, SC, has become his foundation. Today, he couples his “Lowcountry Gullah” cooking technique with an extensive background in culinary arts, menu preparation, restaurant management, hospitality, food service operations, marketing and so much more. The result? The taste of love in every single bite.

Chef Carlos is known for his immaculate culinary creations and has prepared delightful dishes for a variety of celebrity clients over the years—including Oprah Winfrey, David Oyelowo, Danny Glover, Congressman John Lewis, former NFL star Bo Jackson, actor Bill Bellamy—as well as for movie sets, red-carpet events and more.

Recently, he kicked off the launch of his Gullah on the Go food truck stationed near downtown Atlanta. He describes his cuisine as, “food that makes your face smile.” The menu features savory items including: his award-winning White Cheddar Shrimp and Grits with Lump Crab Beurre Blanc Sauce; Seafood Etouffee with Cajun Rice; Gullah Burger; Shrimp Po’ Boy with Peach Jalapeno Cole Slaw; Cajun Truffle Fries; Gullah Chicken Sandwich; Fried Green Tomatoes with Cajun Remoulade Sauce; Cheesesteak with Gullah Sauce; Refreshing Pineapple Tea; and much more.

“I’m very grateful for my Charleston roots. My Gullah culture is sometimes a forgotten art,” said Chef Carlos. “Anyone can prepare a meal, but it takes a special person to prepare an experience. When people explore my cuisine, I want them to feel the gift of love. I have a photo of my grandmother in my wallet that I smile at when I'm cooking. I make sure that all of that love, grace, peace and joy that I received from her and my mother comes through in every dish.”

The husband and father has been honored by a variety of organizations for his talents, including the African American Arts Museum in Washington DC, American Culinary Federation (ACF) Award, Kingston Chef Scholastic Award, Diamond Culinary Medal, Top Chef South Carolina and many more.
